This is a light and refreshing dish that’s perfect for a summer lunch or side dish.

INGREDIENTS

  • 1 box Al’FezTM Moroccan Spiced Couscous
  • 1 ¼ cup boiling water or stock
  • 1 tbsp butter or olive oil
  • 1 red pepper, chopped
  • 1 zucchini, chopped
  • 1 red onion, diced
  • Cherry tomatoes, sliced
  • Fresh coriander, chopped (for garnish)

INSTRUCTIONS

  1. In a heatproof bowl, add Al’FezTM Moroccan Spiced Couscous and boiling water (or stock).
  2. Cover and let sit for 5 min. Uncover the couscous and use a fork to loosen the grains.
  3. In a heated pan, add butter (or oil), peppers, zucchini, and onion. Sauté the vegetables until tender.
  4. Mix sautéed vegetables and cherry tomatoes with the couscous.
  5. Garnish with fresh coriander.
