A delicious twist on traditional enchiladas! With a hint of chili, tomato and fresh garlic.

INGREDIENTS

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 1 lb. chicken thighs, sliced
  • 1 red onion, sliced
  • 1 red pepper, sliced
  • 4 tbsp Al’FezTM Harissa Paste
  • 1 ¾ cup tomato purée
  • 8 corn tortillas
  • ½ cup grated mozzarella and/or cheddar

INSTRUCTIONS

  1. Heat oil in a frying pan and cook onion and garlic until soft.
  2. Add chicken, red onion, peppers, and Al’FezTM Harissa Paste. Sauté on high heat for 3-4 min.
  3. Add tomato purée and cook for 4-5 min or until the chicken is cooked.
  4. Take some tomato sauce out and set aside.
  5. In each tortilla, add 2-3 tbsp of chicken and make a roll.
  6. Lay all the tortilla rolls side by side in a greased baking dish.
  7. Pour the remaining tomato sauce on the tortillas and sprinkle evenly with grated cheese.
  8. Cook in preheated oven at 375°F for 35-40 mins or until the cheese is melted and golden brown.
