Shrimp & Prosciutto Couscous Salad

A party show stopper! A delicious and dish that’s perfect for a sharing during a lunch or dinner.

INGREDIENTS

  • 3 boxes Al’FezTM Moroccan Spiced Couscous
  • 4 ¼ cups boiling water or stock
  • 30 shrimp peeled and gutted
  • 15 slices ham or prosciutto, cut in half lengthwise
  • 3 tbsp coconut oil
  • ½ cup mayonnaise
  • ½ cup green pesto
  • 1 jar sundried tomatoes, sliced
  • 1 jar black olives, sliced
  • 3 shallots, sliced into rings
  • 2 large zucchini, sliced and grilled
  • Fresh oregano leaves (for garnish)

INSTRUCTIONS

  1. In a heatproof bowl, add Al’FezTM Moroccan Spiced Couscous and boiling water (or stock).
  2. Cover and let sit for 5 min. Uncover the couscous and use a fork to loosen the grains.
  3. Wrap each strip of ham or prosciutto around a shrimp.
  4. Fry the wrapped shrimp in hot coconut oil until crispy.
  5. Mix the mayonnaise with the green pesto and transfer into a piping bag.
  6. Arrange the couscous on a serving platter and arrange the various ingredients on it.
  7. Garnish with fresh oregano and pesto mayonnaise. Can be served hot or cold.
