NATURAL TAHINI

INGREDIENTS

  • 1 head garlic, broken into individual unpeeled cloves
  • ⅔ cup lemon juice, freshly squeezed
  • ½ tsp ground cumin
  • 1 cup Al’FezTM Natural Tahini
  • Cold water
  • Salt, to taste

INSTRUCTIONS

  1. Combine garlic and lemon juice in a blender. Pulse until a purée is formed, about 15 short pulses.
  2. Transfer to a fine mesh strainer set over a large bowl. Press out as much liquid as possible using the back of a spoon or a rubber spatula. Discard solids.
  3. Add cumin and Al’FezTM Natural Tahini to lemon and garlic mixture, and whisk to combine. The mixture will seize up and turn pasty.
  4. Add water a few tbsp at a time, whisking in between each addition, until a smooth, light sauce is formed.
  5. The tahini sauce should form a ribbon that loses its shape when dropping from the whisk into the bowl. Salt to taste. Keeps for up to 10 days in the refrigerator.
